A deep dive into B Prime and what the new modern steakhouse offers

There’s nothing wrong with classic, but there’s something unique about taking a quintessential idea up a notch. And the latter is where a new Atlantic City restaurant, B Prime, thrives. 

“We created B Prime as a modern alternative to the classic steakhouse,” says Borgata Vice President of Hospitality Anthony Caratozzolo in a statement.

The new bar and eatery recently opened in the Borgata Hotel, Casino & Spa earlier this summer, and the establishment—led by Executive Chef Howard Stilianessis—is said to blend an indulgent menu, imaginative cocktails and a curated music playlist all into one experience.

“From tableside presentations to high-quality steak cuts and beverage offerings, the restaurant will provide guests a first-class culinary experience from the moment they arrive until the conclusion of their evening with us,” finishes Caratozzolo.

B Prime has the makings of a steakhouse, but with the backdrop of something a little more eclectic. As most of the Borgata’s spaces run, the casino’s floor seems to blend in with the atmosphere naturally, and once you sit, you could be anywhere around the country or even the globe—and the menu makes sure of that. 

The establishment boasts offerings chock full of items from all over, including a curated collection of the best steak cuts available sourced from Japan, New Jersey, Idaho, and Texas. Hand-selected menu options feature a 42-ounce B Prime Tomahawk for two, an 18-ounce Wagyu Chateaubriand, and the “Taste of Japan” Steak Flight, one of the menu’s unique offerings, which includes A5 Kobe Beef. 

But the entrees aren’t the only unique experience on the menu. B Prime also has a long list of appetizers and signature dishes, including: steak tartare topped with a quail egg, house-made pickles and toasted sourdough; a seared crab cake served with preserved lemon and remoulade; dayboat scallops topped with seasonal succotash and petite greens; and Wagyu cheesesteak bites topped with caramelized onions, aged provolone and truffle on a buttered Parker roll. 

Everything on the menu is meant to feel familiar, but with the added touch of out-of-the-box influences. You want a savory starter? Why not go for a pasta…a Cacio e Pepe in fact, served with a custard-like poached egg folded into homemade spaghetti that brings cheese, pepper, and pasta together for a flavorful and hearty dish. You want a seafood tower? How about a Seafood Plateau, and one with Maine lobster, shrimp, oysters, clams and tuna tartar to round out your meal.

The menu also includes a selection of vegetarian and vegan options, with a focus on fresh produce sourced locally, a release states. The cauliflower steak topped with pistachio vinaigrette, radish, and crispy shallots is a highlight for plant-based diners or those wanting a hearty vegetable entrée, along with the signature Jersey Tomato Salad as another choice.  

Dinner would not be complete without drinks, and the libations mirror the food options in both variation and global influence at B Prime. 

Highlights include the Borgata Signature Old Fashioned (aka the most classic of whiskey cocktails, handmade with bourbon or rye, demerara gomme, a dash of Angostura bitters and garnished with an orange twist) and The Kiwi Energy (blended with vodka or tequila, and made with Orgeat, pineapple and kiwi juice.) And being by the shore, the establishment also has made the Beach Don’t Kill My Vibe (crafted with Coruba Jamaican Rum, tangerine juice, lemon juice, passionfruit, and sugar cane syrup, served over crushed ice with orange, pineapple and mint garnishes.) A variety of beers and an extensive wine-by-the-glass list rounds out B Prime’s beverage menu.

With the casino itself being a destination on its own, the new venue inside is meant to add an extra layer to the atmosphere—but it’s also meant to be a sole experience with good food, service and a place to make the classics seem new and fresh. Those looking for a familiar spot to indulge can find solace here, and those needing something a little extra can also use the menu items as a way to enjoy creatively. You just have to decide what mood you’re in.
